Kind of looks like a crawdad. Can you eat them? You got brave and picked it up.
Looks very similar to what we call Mudbugs. I've only eaten them once and there were surprising good.

Looks like quite a clean version of the mud prawns I am used to seeing. I understand that at a certain time of the year a type of swimming prawn swims upriver from near the river mouth. Reasonably large and most edible.
